Omelette Ouverte
Chef’s notes
Start the onions with the garlic if you prefer them beyond caramelized. If you don’t want runny yolks, cover throughout, and/or just break them. Freeze pre-cut onions and/or use pre-minced garlic to trade a bit of health and flavor for convenience and reduced prep/cook time. A variety of vegetables will work, obviously, including hash browns. These ingredients are nice for winter.

Ingredients
- 2 eggs
- 4 cloves fresh garlic
- 1/2 cup minced, slivered, or diced onions
- Salt
- Spinach, kale, or both
- Square of real butter
Directions
- Smash garlic
- Melt w/ butter
- Stir fry with onions
- Bring to circle in center
- Greens atop
- Eggs atop
- Cook ~3 min
- Shake non-stick / silicon spatula (watch for onion smoke)
- Serve with orange juice 🙂
