COOKIES! Oatmeal, Walnut, Chocolate Chip
These are a delicious soft cookie. The goal was to re-create the Insomnia Cookies deluxe cookie that is near identical, but with at home, better ingredients. It turned out very well.

- Make sure all ingredients are room temperature before starting.
- It’ imperative to cream the sugar before mixing everything together.
- Use the classic Quaker oats. Other ones will mess with the texture in an odd way.

Ingredients
- 1 Egg
- 6 Tbsp unsalted butter
- 1/2 Cup Light Brown Sugar (Packed)
- 2 Tbsp White Granulated Sugar
- 2 Tsp Pure Vanilla Extract
- 1 1/2 Cups Old Fashioned Rolled Oats
- 3/4 Cup + 1 1/2 Tbsp All-Purpose Flour
- 1/2 Tsp Baking Soda
- 1 Tsp Ground Cinnamon
- 1/4 Tsp Fine Sea Salt
- 1/4 Tsp Nutmeg
- 1/3 Cup Chopped Walnuts
- 1/2 Cup Semi-Sweet Chocolate Chips
Directions
- Combine room temperature butter, light brown sugar and granulated sugar until creamy.
- Add the egg and vanilla extract and blend with sugars until well combined.
- In a separate bowl whisk together rolled oats, all-purpose flour, baking soda, ground cinnamon, fine sea salt and nutmeg.
- Slowly add the dry ingredients to the creamed sugar. Continue mixing until all dry mix is in the bowl and just combined.
- Use spatula to fold in the chocolate chips and chopped walnuts.
- Scoop onto cookie sheet.
- Bake for 10-12 minutes at 375 degrees.
