COOKIES! Oatmeal, Walnut, Chocolate Chip

These are a delicious soft cookie. The goal was to re-create the Insomnia Cookies deluxe cookie that is near identical, but with at home, better ingredients. It turned out very well.

Chef’s notes

  • Make sure all ingredients are room temperature before starting.
  • It’ imperative to cream the sugar before mixing everything together.
  • Use the classic Quaker oats. Other ones will mess with the texture in an odd way.

Ingredients

  • 1 Egg
  • 6 Tbsp unsalted butter
  • 1/2 Cup Light Brown Sugar (Packed)
  • 2 Tbsp White Granulated Sugar
  • 2 Tsp Pure Vanilla Extract
  • 1 1/2 Cups Old Fashioned Rolled Oats
  • 3/4 Cup + 1 1/2 Tbsp All-Purpose Flour
  • 1/2 Tsp Baking Soda
  • 1 Tsp Ground Cinnamon
  • 1/4 Tsp Fine Sea Salt
  • 1/4 Tsp Nutmeg
  • 1/3 Cup Chopped Walnuts
  • 1/2 Cup Semi-Sweet Chocolate Chips

Directions

  1. Combine room temperature butter, light brown sugar and granulated sugar until creamy.
  2. Add the egg and vanilla extract and blend with sugars until well combined.
  3. In a separate bowl whisk together rolled oats, all-purpose flour, baking soda, ground cinnamon, fine sea salt and nutmeg.
  4. Slowly add the dry ingredients to the creamed sugar. Continue mixing until all dry mix is in the bowl and just combined.
  5. Use spatula to fold in the chocolate chips and chopped walnuts.
  6. Scoop onto cookie sheet.
  7. Bake for 10-12 minutes at 375 degrees.
