Ingredients

  • 2/3 cup old fashioned oats
  • 1/4 cup unsweetened shredded coconut
  • 2 Tbsp. mini chocolate chips
  • 1 Tbsp. chia seeds
  • 1 Tbsp. flax seeds
  • 1/4 tsp. ground cinnamon
  • Pinch of kosher salt
  • 1/3 cup natural peanut butter
  • 2 Tbsp. honey
  • 1 Tbsp. (or more) whole milk, if needed
  • 1/4 tsp. pure vanilla extract

Directions

  1. In a large bowl, combine oats, coconut, chocolate chips, chia seeds, flax seeds, cinnamon, and salt.
  2. Stir in peanut butter, honey, and vanilla until mixture is slightly crumbly. If it’s too dry, gradually stir in 1 Tbsp. milk, or more, if needed.
  3. Using wet hands, roll mixture into small balls (about 1 heaping tsp. each) and arrange on a large parchment-lined baking sheet.
  4. Refrigerate until chilled, about 30 minutes.
