Ingredients

  • 1 cup pumpkin puree
  • 1 cup peanut butter
  • 2/3 cup honey or maple syrup
  • 4 eggs
  • Cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon apple cider vinegar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350°F. Line an 8×8 baking dish with parchment paper then lightly grease and set aside.
  2. Combine all ingredients and mix well.
  3. Pour mixture into the prepared pan and place in the oven for 30-35 minutes, until center is set. Bars will be slightly moist. Allow to cool in pan for 15 minutes then place the bars in the pan in the refrigerator for at least 30 minutes, or up to a few days.
