There are many pasta places in the city, but only one sells handmade pasta that, after being cooked, is passed through a cheese wheel. You can add traditional sauces or extra cheese. The place is called “Más Queso” (more cheese).

This has attracted a lot of interest, and since it’s new, there’s a line to see the novelty, almost exclusively to see the pasta on the giant cheese wheel.

But as there is everything in the Lord’s vineyard, one customer asked for her pasta without cheese. To everyone’s surprise, especially the Italian immigrant who at first thought it was a joke and asked for confirmation several times before proceeding to sell the plain and boring pasta.

This reminded me of a similar episode, a hot dog stand whose big draw was selling homemade sausages made from different types of meat: beef, pork, turkey, venison, wild boar, etc. Outside, it had a giant neon sign that said “100% meat,” but it still received a one-star review from someone who complained that they didn’t have vegan alternatives.
