Reverse Sear Steak
This is a simple description of what I feel is the best, most consistent way to easily make a perfect steak.

Ingredients
- Steak (whatever cut you like)
- Salt
Directions
- Preheat oven to 200 F
- Preheat skillet of your choice to medium high
- Season steak with whatever you like (I usually just use salt)
- Using ghee or other high temp oil like avocado oil, sear all sides of steak until nice golden color
- Put steak on a cooling rack placed on top of a baking sheet, so that air can get around the steak, and also so the steak isn’t sitting in its own juices.
- Insert remotely monitored thermometer into steak, and put steak into oven
- Remove steak when desired internal temperature is met. For me that is around 128 F
- Cover with aluminum foil loosely for 10 minutes to rest
