Reverse Sear Steak

This is a simple description of what I feel is the best, most consistent way to easily make a perfect steak.

Ingredients

  • Steak (whatever cut you like)
  • Salt

Directions

  1. Preheat oven to 200 F
  2. Preheat skillet of your choice to medium high
  3. Season steak with whatever you like (I usually just use salt)
  4. Using ghee or other high temp oil like avocado oil, sear all sides of steak until nice golden color
  5. Put steak on a cooling rack placed on top of a baking sheet, so that air can get around the steak, and also so the steak isn’t sitting in its own juices.
  6. Insert remotely monitored thermometer into steak, and put steak into oven
  7. Remove steak when desired internal temperature is met. For me that is around 128 F
  8. Cover with aluminum foil loosely for 10 minutes to rest
