Chef’s notes
You can find galangal (aka laos), lemongrass, and sambal from an asian store. Salam leaves and kecap manis are trickier and might need to be ordered online, unless you live in the Netherlands then go to a toko.
You can sub one bay leaf for the salam leaves. Sub soy sauce and brown sugar in equal parts then heated for kecap manis. Promise me you will do your best not to sub, though 🤝
To bruise lemongrass, peel the outer layer then use the back of a knife to smash it. Really go for it, think of something that annoyed you this week lol. Then, tie it in a loose knot so it fits nicely in the pot.
Parts sambal to kecap manis is up to your taste buds :) experiment!
Options: Use chicken with bones for a heartier broth. Once you shred the chicken, you can fry it in a thin layer of oil. Same with the soft boiled egg. Yes, I mean fry an already boiled egg. Criapy chicken and egg are🤌

Ingredients
- 6 Chicken breasts
- 1 onion
- 1 bulb garlic
- 2 salam leaves
- Small handful piment (allspice) beads
- 4 stalks lemongrass
- 5 chicken stock cubes
- Bag of bean sprouts
- 6 eggs
- French fry chips
- Fried onions
- Sambal
- Kecap manis
- Galangal (two thumb size pieces, minimum ;))
Directions
- Boil chicken in 3L water for 30 min
- Skim off top and throw it out
- Take chicken out and put in a bowl to cool off
- Put galangal, onion cut in half (cut off root), 5 cloves garlic (bulb cut horizontal), 5 stock cubes, handful of piment (allspice) beads, 4 peeled and bruised lemongrass, 2 salam leaves in chicken broth and let simmer for 3-4 hours
- While simmering, soft boil eggs and shred chicken
- Pour through colander and collect broth
- Make a bowl with bean sprouts, french fry chips, and shredded chicken
